Catering for the PM

"Our PM (Prime Minister) is affable, dynamic, pragmatic and a light eater,” chef Farrokh Khambata told Mid Day (MD) of April 2. "This is the third catering for the PM… The earlier two were when he was chief minister of Gujarat,” the restaurant owner revealed. When PM Narendra Modi and other dignitaries attended the 80th anniversary celebrations of the Reserve Bank of India at the Jamshed Bhabha Theatre in the National Centre for the Performing Arts (NCPA) complex on April 2, 2015, the catering was provided by Khambata of Catering and Allied which owns Joss, Umame, Amadeus and the Café at the NCPA.

Queried about the menu, Khambata responded, "There (was) our famous khao suey, which the PM has tasted and loved twice before… I also have created a panko crusted keher sanghri ka kofta and aloo dum with jhalmuri sprinkle along with thikri daal…” For dessert the notables were slated to experience mishti doi kulfi and molecular jalebi with hazelnut phirni.
Khambata informed MD that the "standing special instructions” for this famous diner are always ginger tea, Marie biscuit and Himalayan water.
